Insectéo Crickets Thai were selected by Romain Fessard for their taste and their quality. Those crickets come from an insect farm located in Thailand where our French partner has been breeding edible bugs for years. Crickets are reared and prepared on site. Before being packaged, ithe bugs are first frozen during 48 hours before being boiled and then dried by baking. They are then seasoned according to a traditional Thai recipe with lemongrass and kaffir leaves. Bug eaters usually love this product as the natural nutty taste of the crickets goes very well along the lemongrass flavor. Insectéo products were designed by Romain Fessard, creator of InsectesComestibles.fr in 2009 and author of the French cookbook titled Delicious! 60 recipes with insects (Héliopoles editions), after a selection of the best edible bugs from Thailand. These crickets come from a farm owned by a French partner where the strictest health rules are respected. In addition, all the insects of the farm eat only natural productsfrom the local market: fruits, vegetables, herbs. Thailand is the largest producer of edible insects in the world with over 22,000 farms over the its territory, most of them being located in the north. The Thais are big consumers of insects as they are very popular street snacks, this is why they created delicious such as this one with lemongrass and kaffir leaves.
